“Make A New Coffee Shop”
It's been 10 years since Blue Bottle Coffee first arrived in Japan in 2015 as a black ship of the coffee world. Now, with the third wave of coffee firmly established and a boom in roasters focused on roasting, various cafes are opening to explore new possibilities in coffee. SAMAA_, opened by a former Blue Bottle Coffee owner in a renovated 70-year-old row house, is promoting the fourth wave of deliciousness, sustainability and design; while Fuglen, which arrived from Norway in 2012, has expanded into Kyoto, a hotbed of coffee. And the new generation, born after 1990, and young people from well-known cafes, are also opening new stores one after another.
